The Bird in Hand Tasmanian Series is crafted to harness Tasmania's cool-climate terroir and produce wines of distinct character and elegance. It is an ode to winemaking in the rugged wilderness of Australia’s final frontier.
The 2025 Sparkling is a vibrant, fruit-forward sparkling wine, crafted from single vineyard grapes sourced from our property in the Tamar Valley.
A blend of 50% Pinot Noir and 50% Chardonnay, grapes were handpicked and whole bunch pressed, followed by a slow, cool fermentation to maintain the freshness and aromatics. The wine was left to mature on light lees for six weeks, enhancing its complexity. With 100% malolactic fermentation, the acidity is beautifully softened, lending a roundness that balances the wine’s vibrant energy.Â
Bright and fresh, the bouquet shows red apple, citrus blossom, and lemon zest, with floral and mineral notes. The palate is crisp and vibrant, led by green apple and citrus, with hints of strawberry and fine bubbles. This wine is a lively expression of place and purity.

Our bouquets are made fresh to order with seasonal blooms. While the exact flowers may vary, your order will always reflect the colour palette, style, and overall feel shown. If a specific flower is unavailable, we’ll carefully substitute with something just as beautiful that is in keeping with the colourtone.

You’re welcome to leave flower preferences in the Florist Notes at checkout, and we’ll always do our best to accommodate them. However, during peak periods like Mother’s Day and Valentine’s Day, we can’t guarantee specific flower types due to limited seasonal availability and high demand. Rest assured, your order will always be made in the same style and colour palette as shown, using the freshest blooms available.

On average, our flowers last 3–5 days with proper care, though this can vary depending on the flower varieties used. All bouquets are delivered in water to keep them fresh for up to 24 hours until they’re placed in a vase.

Yes! We use recyclable paper wrapping and do our best to avoid cellophane. If no one is home, we leave your flowers safely in biodegradable water cups at the door to keep them fresh.
